Ham and cauliflower casserole

Serves 6
3 cups cooked ham, cubed
3 cup cauliflower florets, cooked
1 ½ cup sliced mushrooms
salt and pepper to taste
2 Tbsp butter
2 Tbsp all purpose flour
1 cup milk
½ cup sour cream
1 cup shredded Cheddar cheese
1 Tbsp dry bread crumbs
Combine ham, cauliflower and mushrooms in an ungreased 3 quart casserole dish. Sprinkle with salt and pepper and set aside. Melt butter in a saucepan; stir in flour and milk. Cook over medium heat, stirring frequently, until thickened. Stir in sour cream and cheese; continue cooking until cheese has melted and sauce is smooth. Set aside; pour sauce over top of ham mixture. Sprinkle with bread crumbs. Bake at 350 F for 30-40 minutes or until heated through.
