Flemish Beef stew

Category: Best ever casseroles

Serves 4-6

5 slices bacon, cut into 1/2 inch pieces
2 lb boneless beef chuck, cut into 1 inch cubes
2 onions, sliced
2 cloves garlic, minced
3/4 cup regular or non alcoholic beer
12 oz baby carrots
1/2 tsp dried thyme
Garnish: fresh parsley, chopped

Cook and stir bacon until crisp over medium heat in a Dutch oven. Remove bacon with a slotted spoon; set aside. Add beef to drippings; cook over medium high heat until browned, stirring occasionally. Add onions and garlic; cook and stir for one minute. Remove from heat; stir in remaining ingredients except parsley. Cover and bake at 350 F for 45 minutes. Uncover and bake an additional 45 minutes. Sprinkle servings with parsley and reserved bacon.
