3 bean bake

Serves 6

1 lb ground beef
6 sliced bacon, diced
1 onion, chopped
1 green pepper, chopped
1 Tbsp white vinegar
1 Tbsp mustard
1/2 cup ketchup
1/2 cup brown sugar, packed
15 oz can kidney beans, drained and rinsed
16 oz can chili beans
15 oz can pork and beans
6 slices American cheese
1 cup tortilla chips, crushed

Brown ground beef, bacon onion and pepper in a large skillet over medium high heat; drain. Pour into an un-greased 3 quart casserole dish. Add vinegar, mustard, ketchup, brown sugar and beans; mix to blend. Bake at 375 F for 45-50 minutes; remove from oven and top with cheese and chips. Bake an additional 5-10 minutes, until cheese is melted and bubbly.
