Tamale Pie

Serves 6-8

1 onion, chopped
1 clove garlic, minced
1 Tbsp oil
1 1/2 lbs ground beef
8 oz pkg corn chips, crushed
15 1/4 oz pkg corn chips,crushed
15 1/4 oz can corn, drained
14 3/4 oz can creamed corn
4 oz can black olives, drained and chopped
2 (8 oz) cans tomato sauce, divided
2 Tbsp chili powder
1/8 tsp cayenne pepper

Saute onion and garlic in oil in a skillet just until soft; add ground beef and heat until beef loses its pink color. Add corn chips, corn, creamed corn, olives, one can tomato sauce and seasonings to meat mixture; mix well and pour into an ungreased 13x9 inch baking pan. Top with remaining tomato sauce. Cover and bake 45 minutes at 350 degrees.
