Tortilla Sushi

Serves 2
2 fresh asparagus spears
1 cup cold cooked rice
2 Tbsp Herb and garlic spreadable cream cheese
1/2 cup imitation crab meat (not canned), flaked
1 Tbsp creamy Caesar dressing
1 (9 inch) spinach flour tortilla
Snap the white, woody ends off the asparagus spears. Wash the spears and place them, wet, on the plate. Microwave, covered, on high for 20-30 seconds until softened.
Put the rice and cream cheese into a bowl. Mix well. Add the crab meat and dressing. Stir.
Spread the crab meat mixture at the bottom of the tortilla. Roll the tortilla tightly around the asparagus. Wrap with the plastic wrap. Chill for about 1 hour until firm. Cut into 6 slices.
