A yotta yams

Serves 2

1 small un-peeled yam (or sweet potato)
2 tsp cooking oil
1/3 cup cornflake crumbs
1 Tbsp all purpose flour
1 tsp Cajun seasoning

Poke the fork into the yam in several places. Microwave on high for 2 minutes. Use the oven mitts to turn the yam over. Microwave for another 2-3 minutes until the knife tip can be inserted but the yam is still firm. Let stand for 20 minutes. Cut the yam lengthwise into quarters. Slice across the quarters to make thin, triangle-like pieces. Place the oven rack in the top position. Turn the oven broiler on. Grease the baking sheet with the cooking spray. Set aside.
Put the yam into 1 of the bags. Drizzle with the cooking oil. Seal up the bag. Shake until coated.
Combine the remaining 3 ingredients in the other bag. Add 1/2 the yam. Seal the bag. Shake until coated. Arrange the yam on the baking sheet. Repeat with the remaining yam. Spray the yam lightly with the cooking spray. Broil in the oven for about 10 minutes until tender and starting to brown. Remove the baking sheet to the wire rack. Turn the oven broiler off.

** For a less spicy version, use seasoned salt instead of Cajun seasoning.
