Serves 6
2 medium bananas, sliced
3 Tbsp peanut butter
3/4 cup quick cooking rolled oats
1/4 cup chopped dried apricot
1/4 cup chopped pecans
1/4 cup dried cranberries
Place the oven rack in the center position. Turn the oven on to 350 F. Grease the baking sheet with the cooking spray. Put the banana slices in the bowl. Mash with the fork until smooth. Add the peanut butter. Stir until well blended.
Add the remaining 4 ingredients. Stir well. Use a 1/4 cup measure to divide the mixture into 6 equal portions. Roll portions into 4 inch long logs. Press logs down to 1/2 inch thickness. Arrange them on the baking sheet. Bake for about 20 minutes until the edges are golden. Remove the baking sheet to the wire rack to cool. Turn the oven off.
