Healthy Chocolate chippers

Makes 24 cookies

1/2 cup softened butter
3/4 cup brown sugar, packed
1 large egg
1/2 tsp vanilla extract
3/4 cup all purpose flour
2 Tbsp cornstarch
1/2 tsp baking soda
1/4 tsp salt
1 cup quick cooking rolled oats
3/4 cup chocolate chips
3/4 cup chopped dried apricot

Place the oven rack in the center position. Turn the oven to 350 F. Grease the cookie sheets with the cooking spray. Set aside. Put the butter and brown sugar into the large bowl. Mix until smooth and creamy. Add the egg. Stir well. Add the vanilla extract. Stir until smooth.
Put the next 4 ingredients into a small bowl. Stir. Add about 1/2 of the flour mixture to the butter mixture. Stir well. Add the rest of the flour mixture. Stir until no dry flour remains.
Add the remaining 3 ingredients. Stir well. Drop the dough by heaping teaspoons onto the cookie sheet about 2 inches apart. Bake 1 cookie sheet at a time for 10-15 minutes until the cookies are golden. Remove each cookie sheet to a wire rack. Let stand for 5 minutes. Turn the oven off. Transfer the cookies to the wire racks to cool.
