Serves 8

2 (14 oz) cans of crushed pineapple (with juice)
3 ox box of peach jelly powder

Drain enough juice from the pineapple to make 1 cup in the measuring cup. Set aside the pineapple and the rest of the juice. Microwave the measured juice on high for 1 to 2 minutes until small bubbles form.
Add the jelly powder. Stir for about 1 minute until dissolved. Carefully pour the mixture into the blender. Add the crushed pineapple and remaining juice. Cover with the lid. Process until smooth. Pour the mixture into the pan. Cover with plastic wrap. Freeze overnight until firm. Let stand at room temperature for 30 minutes before serving.
