Curried Chicken

Category: Best ever casseroles

Serves 4-6

1 cup mayonnaise
1 cup all purpose flour
1 onion, finely chopped
4-6 Tbsp curry powder
5 cup chicken broth
2 cup cooked rice, divided
4-5 boneless, skinless chicken breasts, cooked, cubed and divided
10 oz pkg frozen French cut green beans, cooked and divided
1 cup soft bread crumbs
1 Tbsp butter

Mix mayonnaise, flour, onion and curry powder in a saucepan. Slowly stir in chicken broth; heat over medium heat until thickened but not boiling. Remove from heat; let cool slightly. In a greased 13x9 inch baking pan, layer half the rice, half the chicken, half the green beans and half the sauce; repeat. Gently mix with a fork to let sauce sink in; set aside. Saute bread crumbs in butter until golden; sprinkle over casserole. Bake at 350 degrees for 20-30 minutes, until heated through.
