3 cheese western omelet

Serves 6

3/4 cup mild salsa
1 cup artichoke hearts, chopped
1/4 cup grated Parmesan cheese
1 cup shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
6 eggs
1 cup sour cream

Spread salsa in the bottom of a greased 10 inch pie plate. Sprinkle artichokes over salsa; top with cheese. Set aside. Blend eggs and sour cream; spread over cheeses. Bake at 350 degrees for 30 minutes or until set. Cut into wedges to serve.
