Baked Spaghetti

Serves 12
1 cup chopped onion
1 cup chopped red/green pepper
1 Tbsp margarine
1 can (28 oz) diced tomatoes, un-drained
1 can (14 oz) drained mushrooms
1 can (2 1/2 oz) ripe olives (drain)
2 tsp oregano
1 lb ground beef, drained
12 oz spaghetti, cooked
2 cup shredded cheddar cheese
1 can cream of mushroom soup, undiluted
1/4 cup water
1/4 cup Parmesan cheese
In a large skillet, saute onion and peppers in margarine until tender. Add tomatoes, mushrooms, olives and oregano. Add ground beef if desired. Simmer uncovered 10 minutes. Place 1/2 of spaghetti in a greased 9x13" baking dish. Top with 1/2 of the vegetable mix. Sprinkle with 1/2 of the cheese. Repeat layers. Mix the soup and water until smooth; pour over casserole. Sprinkle with Parmesan cheese. Bake uncovered at 350 F for 30-35 minutes or until heated through.
