Gourmet Mushroom Fettuccini

Serves 6

1 lb fettuccini
4 oz specialty mushrooms (crimini, shiitake, Enoki, Oyster)
3 Tbsp extra virgin olive oil
3 cloves garlic, minced
1/2 cup pine nuts
3 oz sundried tomatoes, softened and minced

Cook fettuccini according to pkg directions. Meanwhile, in medium saucepan, heat oil and saute remaining ingredients 2-3 minutes.
Remove from heat; toss with hot cooked fettuccini. Top with fresh grated Parmesan cheese.
