Three cheese manicotti

1 cup shredded mozzarella cheese
1 cup ricotta or small curd cottage cheese
1/2 cup grated Parmesan cheese
2 eggs, beaten
1/2 tsp salt
1/8 tsp pepper
1/2 tsp dried parsley flakes
8 Manicotti shells
1/2 lb (15 oz) Spaghetti Sauce, extra thick with zesty with mushrooms
1 1/2 cup water
1 cup shredded mozzarella cheese

Combine 1 cup mozzarella cheese, ricotta and Parmesan cheese, eggs, salt, pepper and parsley. Stuff cooked manicotti shells, using 1/4 cup for each shell. (Cook shells according to package instructions and drain.) Brown meat; drain well. Add spaghetti sauce to meat and 11 1/2 cups water, heat. Pour 1/2 cup sauce into shallow 2 quart casserole, arrange stuffed shells in sauce; pour remaining sauce over top. Sprinkle with 1 cup of shredded mozzarella cheese. Bake uncovered 25-30 minutes in 350 F oven.
