Mexican Rice

Category: side dish

2 Tbsp fat
1 cup raw rige
1 small onions, minced
1 clove garlic, minced
1/2 green pepper, chopped
2 tsp salt
1 cup chopped (peeled) tomato or canned
2 cup chicken broth

Wash rice well and dry; brown raw rice in hot fat. Add onions, clove garlic, green pepper, salt and tomatoes. Mix well and add broth. Cover with lid and allow rice to simmer until tender; about 40 minutes. Remove lid to allow mixture to dry out. Do not stir after cooking starts. Serve pieces of chicken on top of each serving of rice.
