Microwave Strawberry-Banana bread

Makes 18 slices
1 cup whole wheat flour
1/2 cup unbleached flour
2/3 cup packed brown sugar
1 tsp soda
1/4 tsp nutmeg
1/2 cup reduced calorie margarine, softened
1/3 cup buttermilk
2 eggs
1 cup sliced fresh strawberries
1/2 cup mashed banana
1/4 cup chopped pecans
Line bottom of glass 5x9 inch loaf pan with waxed paper. Mix dry ingredients in mixer bowl. Add remaining ingredients. Beat at low speed until moistened. Beat at medium speed for 2 minutes, scraping bowl occasionally. Spoon into prepared loaf pan. Mold 2 inch foil strip over each end of pan, covering 1 inch of batter. Place on saucer in microwave oven. Microwave on Medium for 9 minutes, rotating dish 1/4 turn every 3 minutes. Microwave on High for 3 minutes. Remove foil. Microwave for 2-9 minutes or until center springs back when lightly touched, turning dish once or twice. Let stand at room temperature for 5-10 minutes. Remove to wire rack to cool.
NOTE: check manufacturer's instructions for your microwave oven regarding the use of foil.
