Beef and Vegetables Saute

Serves 4

1 (4 oz) can mushrooms
8 oz lean beef, cut into strips
2 Tbsp oil
1 medium onion, chopped
1 cup cut fresh green beans
1 cup each sliced green pepper, celery
4 tsp cornstarch
1 Tbsp soy sauce

Drain mushrooms reserving liquid. Add enough water to liquid to measure 3/4 cup. Saute beef strips in hot oil in skillet. Add vegetables. Saute for 3-5 minutes or until tender crisp. Add mixture of reserved liquid, cornstarch, soy sauce, mushrooms and salt and pepper to taste. Cook until thickened, stirring constantly.
