Serves 4-6

4 cups chopped peeled potatoes
1/4 cup oil
1 cup chopped onion
1/2 cup chopped green pepper
2 cloves of garlic, minced
1 lb cooked corned beef, chopped
3 Tbsp Dijon mustard
1/4 tsp salt
1/4 tsp hot pepper sauce
4-6 poached eggs

Saute potatoes in hot oil in large skillet for 10-15 minutes or until brown and crisp. Add onion, green pepper and garlic. Saute until vegetables are tender. Stir in corned beef, mustard, salt and pepper sauce. Cook until heated through. Spoon onto serving plates. Top with poached egg.
