Cornmeal muffins

makes about 2 dozen
2 cups cornmeal
2 cup all purpose flour
2 Tbsp baking powder
1 tsp baking soda
5 Tbsp sugar
1 1/2 tsp salt
2 cup buttermilk
4 eggs, beaten
1/2 cup melted butter or margarine
Combine cornmeal, flour, baking powder, baking soda, sugar and salt in a mixing bowl. Beat together buttermilk, eggs and melted butter; add to dry ingredients and mix just until flour is moistened, do not beat. Spoon into well-greased 2 3/4 inch muffins tins.
Bake in a 425 F oven for 15-20 minutes. Cool 15 before removing from pans.
