Foil roasted Elk

Category: Meat

Lightly salt and pepper roast on both sides and place on a large piece of foil. Sprinkle over the top 1/4 cup sherry or part of wine or lemon juice, then sprinkle 1 envelope dry onion soup mixture. Seal and roast in a roasting pan for 2-3 hours at 375 F. It is done when it is fork tender.
