Big Batch Tomato Sauce

Makes 9 pints

3 medium onions, thinly sliced
3 large carrots, thinly sliced
2 medium green peppers, chopped
2 medium cloves of garlic, minced
1/4 cup oil
12 lb tomatoes, peeled, chopped
1 (12 oz) can tomato paste
1/4 cup packed brown sugar
2 tsp oregano
1 1/2 tsp basil
2 Tbsp salt
1/2 tsp pepper

Saute onion, carrots, green peppers and garlic in oil in heavy stockpot over medium heat until tender. Add remaining ingredients; mix well. Bring to a boil; reduce heat. Simmer, loosely covered, for 2 hours, stirring occasionally.
Pour into hot sterilized 1-pint jars leaving 1/2-inch head space. Seal with two piece lids. Process in boiling water bath for 15 minutes. Serve over spaghetti or use with Swiss steak or pizza.
