Enchiladas

Serves 10

2 lb ground beef
1/4 cup flour
1/4 cup chili powder
water 12 corn tortillas
1/2 cup (or more) shortening
2 cup shredded Cheddar cheese
1/2 cup chopped onion

Brown ground beef in saucepan; stirring until crumbly; drain. Stir in flour; remove from heat. Stir in chili powder.
Add 1 cup water, stirring to mix well. Stir in enough additional water to cover beef mixture by 1 inch. Simmer for 10 minutes, stirring constantly until mixture thickens. Simmer for 10 minutes longer.
Fry tortillas in 1 inch of hot shortening is skillet for several seconds. Drain on paper towels. Alternate layers of meat sauce, tortillas, cheese and onion in 9x13-inch baking dish. Bake at 350 F until bubbly. Serve immediately.
