Mini sausage pizzas

Serves 6
Ready in 30 minutes

1 lb. Bob Evans Italian Sausage Roll
6 mini Kaiser rolls (3-inch diameter)
3/4 cup prepared marinara sauce
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
2 Tbsp. grated Parmesan cheese
1-1/4 cups Shredded Mozzarella Cheese, divided

Preheat oven to 375 F. Split rolls horizontally in half. Scoop out insides, leaving 1/2-inch thick shell; set aside. Cook sausage in large skillet on medium-high heat until browned and crumbly; drain well. Add marinara sauce, spinach, Parmesan cheese and 1/2 cup of the shredded Mozzarella; mix well. Spoon 1/4 cup sausage mixture into each hollowed out roll. Sprinkle each with 1 tablespoon shredded Mozzarella. Place on baking sheet. Bake 12 to 15 minutes or until cheese is melted
