Bread pudding

Serve 12

2 cup instant coffee creamer
2 cup warm water
1/2 cup margarine
6 eggs
1 cup sugar
2 tsp vanilla extract
1/2 tsp salt
8 slices white bread, cubed
1/2 cup raisins
cinnamon to taste
1/2 cup sugar
1 Tbsp cornstarch
1/2 tsp nutmeg
1/4 cup melted margarine
1 cup milk
1 tsp vanilla extract

Blend coffee creamer and warm water in mixer bowl. Add 1/2 cup margarine. Beat for 30 seconds. Add eggs. Beat for 1 minute. Add 1 cup sugar, 2 tsp vanilla and salt. Beat at high speed for 2 minutes.
Pour half the mixture into a 9x13-inch baking dish. Add bread cubes and rising; toss to mix well. Pour remaining batter over top. Sprinkle with cinnamon. Bake at 350 for 40-45 minutes or until set. Combine remaining 1/2 cup sugar, cornstarch and nutmeg in saucepan. Stir in 1/4 cup melted margarine and milk. Cook until mixture begins to thicken, stirring constantly. Add remaining 1 tsp vanilla. Cool over low heat until thickened, stirring constantly; do not boil. Serve over pudding.
