Apple Dumplings

Serves 6

1/2 cup red cinnamon candies
1/4 cup water
1/3 cup confectioners' sugar
1/4 tsp nutmeg
1/3 cup chopped pecans
2 2/3 cup sifted flour
1 1/4 tsp salt
1 cup shortening
6 1/2 Tbsp cold water
6 tart apples, peeled, cored
1/2 cup cream
2 cup confectioners' sugar

Combine candies and 1/4 cup water in saucepan. Cook until candies dissolve, stirring constantly; remove from heat. Add 1/3 cup confectioners' sugar, nutmeg and pecans; mix well.
Mix flour and salt in bowl. Cut in shortening until crumbly. Sprinkle with cold water; mix with fork until mixture forms a ball. Divide into 6 portions. Roll each on lightly floured surface; cut into 7-inch square. Place apple in center, fill with pecan mixture. Moisten edges of pastry with cream Fold pastry over apples, pressing edges to seal. Brush with cream. Place on an ungreased baking sheet. Bake at 400 F for 35 minutes or until brown. Mix confectioners' sugar with just enough cream to moisten; beat until fluffy.
Place hot dumplings on dessert plates. Add a dollop of confectioners' sugar mixture. Garnish with cooked apple slices.
