Pepper steak
Category: Main entree
Serves 6
1 1/2 lb round steak
1/2 (about) flour
2 Tbsp (about) oil
1/4 cup chopped onion
1 clove garlic, chopped
1 1/3 cup water
1 (28 oz) can tomatoes
3 green peppers, quartered
Hot cooked rice
Cut steak into 1/2 inch strips; coat lightly with flour. Brown in hot oil in skillet or Dutch oven. Add onion, garlic and water. Drain tomatoes, reserving juice. Add reserved tomato juice to steak mixture.
Cook,covered, over low heat for 1 1/4 hours or bake at 350 F for 2 1/2 hours. Cut tomatoes into quarters. Add tomatoes and green peppers. Cook for several minutes longer until peppers are tender. Serve over hot cooked rice.
