Peanut butter pie

Serves 8
1 cup confectioners sugar
1/2 cup creamy peanut butter
1 baked 9-inch pie shell
2/3 cup sugar
1/4 cup cornstarch
1/4 tsp salt
3/4 tsp vanilla extract
2 egg yolks, beaten
2 Tbsp butter, softened
2 cup milk, scalded
2 egg whites
1/4 tsp cream of tartar
1/2 tsp vanilla extract
6 Tbsp. sugar
Meringue topping (My recipes "Dips and Sauces"
Mix confectioners sugar and peanut butter in bowl until crumbly. Sprinkle half the mixture into pie shell. Mix 2/3 cup sugar, cornstarch,salt, vanilla extract, egg yolks and butter in saucepan. Stir in milk gradually. Cook until thickened stirring constantly. Cool.
Beat egg whites until foamy. Add cream of tartar and 1/2 tsp vanilla; beat until soft peaks form. Add 5 Tbsp. sugar gradually. Pour cooked mixture into prepared pie shell. Spread meringue over top, sealing to pie shell. Sprinkle remaining peanut butter mixture on top. Bake at 350 F for 15 minutes.
