Caramel pie

3 cup sugar
2/3 cup flour
1/8 tsp salt
6 egg yolks, beaten
2 1/2 cup milk
2 Tbsp margarine
1/2 tsp vanilla extract
2 baked 9-inch pie shells
2 recipes meringue (My recipes "Dips and Sauces"
Caramelize 1 1/4 cup sugar in heavy skillet to desired color. Combine remaining 1 3/4 cup sugar, flour and salt in saucepan. Mix in egg yolks. Add milk and margarine. Cook over low heat until thickened, stirring constantly. Stir in caramelized sugar. Cook until thickened, stirring constantly. Add vanilla. Pour into pie shells. Top with meringue, sealing to pie shell. Bake according to meringue recipe instructions.
