Charlene's Recipe

Apple cake

Serves 6

1 1/4 cup sifted flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp sugar
1/2 cup butter, softened
1 egg yolk beaten
2 Tbsp. milk
3 cup sliced apples
2 Tbsp. butter
3/4 cup sugar
1 1/2 Tbsp. flour
1/4 tsp. cinnamon

Sift 1 1/4 cups flour, baking powder, salt and 1 tsp sugar together. Cream 1/2 cup butter in mixer bowl until light.
Add sifted ingredients; mix well. Add mixture of egg yolk and milk; mix well. Press mixture into buttered 8x8-inch baking pan.
Arrange overlapping apple slices on top. Cut 2 Tbsp. butter into remaining ingredients in bowl. Sprinkle over apples. Bake at 375 F for 50 minutes.
