Makes 40 fritters
1 egg, beaten
1 cup milk
1/4 cup melted margarine
1/2 cup sugar
1 cup finely chopped unpeeled apples
1 tsp cinnamon
apple pie flavoring
1 tsp vanilla extract
1 tsp butter extract
3 cup flour
1 Tbsp. baking powder
1/2 tsp. salt
Oil for frying
Confectioners' sugar
Beat egg with milk, sugar and margarine in a large bowl. Add apples and flavorings; mix well. Sift in flour, baking powder and salt. Stir just until mixed; do not over mix.
Drop by Tbsp fulls into preheated 350 F oil in a skillet. Fry until golden brown, turning once. Drain onto paper towels. Cool. Roll in confectioners' sugar to coat.
