Sausage Medley

Category: Main entree

Serves 4

1 pkg. (10 oz.) frozen baby whole carrots
2 sweet potatoes, cut into 1-1/2-inch pieces
1 Tbsp. vegetable oil
1 (1 lb.) pkg. Hillshire Farm Beef Smoked Sausage, cut into 1-inch slices
1/3 cup brown sugar
Maple syrup to taste
1/4 cup water
3 Tbsp. honey
1 (8 oz.) can pineapple chunks, drained

Cook carrots and sweet potatoes in a small amount of boiling water in a covered medium saucepan for 10 to 15 mins or until vegetables are tender. Drain.
Meanwhile, heat oil in a 10-inch skillet; add the sausage. Cook for 5 mins or until lightly browned. Drain.
Stir brown sugar, water, syrup and honey into sausage in skillet. Cook and stir until bubbly. Stir in carrots, sweet potatoes and pineapple. Bring to a boil; reduce heat. Simmer, uncovered, for 10 mins.
