Spaghetti With Quick Meat Sauce
Category: Main entree
Serves 4
12 oz. spaghetti
2 Tbsp. olive oil
1 large onion, chopped
2 carrots, chopped
2 cloves garlic, chopped
3/4 lb. ground beef
Kosher salt and pepper
1 28-oz. can crushed tomatoes
1/2 cup fresh flat-leaf parsley, chopped
1/4 cup grated Parmesan
Cook the pasta according to the package directions. Meanwhile, heat the oil in a large saucepan over medium heat. Add the onion, carrots, and garlic and cook, stirring occasionally, until soft, 8 to 10 minutes.
Increase heat to medium-high. Add the beef, 3/4 teaspoon salt, and 1/2 teaspoon pepper and cook, breaking up the meat with a spoon, until no longer pink, 4 to 5 minutes. Add the tomatoes and simmer, stirring occasionally, until the sauce thickens, about 5 minutes. Stir in the parsley.
Serve the pasta with the sauce and sprinkle with the Parmesan.
