Super chunk peanut butter cookies

Makes 3 1/2 dozen
Complete in 25 minutes

1/2 cup (1 stick) unsalted butter, at room temperature
3/4 cup creamy peanut butter
1/3 cup granulated sugar
1/3 cup light brown sugar
2 eggs
1 tsp. vanilla
2 1/4 cup all purpose flour
1 tsp. baking soda
1/2 tsp. salt
3/4 cup peanut butter chips
1 package (12 oz.) semisweet chocolate chips (2 cups)
1/2 cup chopped unsalted peanuts

Heat oven to 350 F.
In a large bowl, beat butter and peanut butter until smooth. Add granulated sugar and brown sugar and beat until smooth. Add eggs, one at a time, and beat until light and fluffy. Beat in vanilla.
Sift together flour, baking soda and salt on a sheet of waxed paper. Slowly beat onto peanut butter mixture until well combined. Fold in peanut butter chips, chocolate chips and peanuts.
Scoop about 1 heaping Tbsp. of batter into your hands. Carefully flatten into a 2 inch round. Place on an un-greased baking sheet. Continue with remaining batter.
Bake in heated 350 F oven, 10 minutes or until lightly golden and firm. Cool 2 minutes on sheet then transfer to a wire rack to cool.
