Classic carrot cake

Serves 16
2 cups all purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. ground cinnamon
3/4 tsp. ground ginger
1/2 tsp. ground all spice
1 cup vegetable oil or light olive oil
4 eggs
1 cup granulated sugar
3/4 cup packed dark brown sugar
1/2 cup fresh orange juice
1 tsp. vanilla
2 cup shredded carrots
2 cup chopped walnuts, toasted
cream cheese icing (recipe under "my recipes, dips and sauces")
Heat oven to 350 F. Grease and flour a 13x9x2 inch baking pan.
Sift flour, baking powder baking soda, salt, cinnamon, ginger and allspice onto a sheet of waxed paper.
Beat oil, eggs, granulated sugar and brown sugar in a large bowl on medium speed, 2 minutes or until well blended. Stir in orange juice and vanilla.
Beat in flour mixture on lowest speed just until blended. Stir in carrots and walnuts until combined. Scrape into prepared pan.
Bake in heated 350 F oven for 45-50 minutes or until a wooden pick inserted in center comes out clean.
Cool completely in pan on a wire rack. Spread with cream cheese icing, cut into 16 squares and serve.
