Quick and Easy Cheesecake

- 2 packages (8 ounce size) cream cheese, softened
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 2 eggs
- 1 graham cracker pie crust
Preheat the oven to 350 degrees F. Combine the cream cheese, sugar, vanilla, and eggs in a mixing bowl. Beat on medium-high speed with an electric mixer until light, fluffy, and well mixed. Pour the cheesecake filling into the graham cracker crust. Place the cheesecake in the oven and bake at 350 degrees F for 40 minutes. Remove the cheesecake from the oven and let cool completely. When cool, place the cheesecake in the refrigerator for a minimum of 3 hours before slicing and serving. Top with any desired toppings such as fruit or flavored syrups.
