Cookies n cream cupcakes

Makes 12 cupcakes
1 3/4 cup all purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/3 cup unsalted butter or margarine, at room temperature
3/4 cup sugar
1 egg
3/4 cup milk
1 Tbsp. grated orange rind
1 tsp. vanilla
5 cream filled sandwich cookies, coarsely broken
creamy chocolate frosting (recipe under "my recipes", dips and sauces)
creamy chocolate sandwich cookies for garnish (optional)
Place an oven rack in lower third of oven. Heat to 375 F. Coat cup of standard 12-muffin pan with nonstick cooking spray or insert a paper liner in each.
Mix flour, baking powder and salt on a sheet of waxed paper.
Beat butter and sugar in a large bowl until creamy. Add egg; beat well. Beat flour mixture alternately with milk into butter mixture, beginning and ending with flour. Beat in orange rind and vanilla. Stir in cookies.
Spoon batter into prepared cup, filling each about 2/3 full.
bake in lower third of heated 375 F oven, 14 minutes or until a wooden pick inserted in centers comes out clean and tops spring back when lightly touched. Cool in pan on a wire rack, 5 minutes. Gently loosen cupcakes from pan; remove to rack to cool.
Spread creamy chocolate frosting over top of cupcakes. Garnish with broken cookies, if desired.
