Double chocolate cake

Category: cakes

Complete in 1 hour 15 minutes
Serves 15

2 cups sifted all purpose flour
2 tsp. baking soda
1/4 tsp. salt
1/2 cup (1 stick)unsalted butter or margarine, softened
3/4 cup granulated sugar
3/4 cup firmly packed light brown sugar
3 eggs
3 squares (1 oz. each) unsweetened chocolate, melted
1/2 cup buttermilk
1 cup boiling water
1 Tbsp. vanilla
chocolate cream cheese frosting "recipe under my recipes, dips and sauces"
Fresh strawberries and white chocolate for garnish (optional)

Heat oven to 375 F. Grease and flour two 9-inch round cake pans.
Sift together butter and sugars in a large bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in chocolate.
Add dry ingredients to butter mixture alternately with buttermilk in 3 additions. Add boiling water and vanilla; mix until smooth (batter will be thin). Pour into pans, dividing evenly.
Bake in heated 375 F oven, 35-40 minutes or until a wooden pick inserted in center comes out clean. Cool layers in pans on wire racks 15 minutes. Loosen cake layers around edges with a small spatula; turn out onto wire racks to cool completely.
Fill and frost cooled layers with chocolate cream cheese frosting. If you wish, garnish cake with strawberries dipped in white chocolate that has been melted over hot (not boiling) water.
