Makes 3 1/2 dozen
1 cup chunky peanut butter
1/2 cup dark corn syrup
1 cup rice cereal
8 oz. milk chocolate, broken into pieces
1/4 cup finely chopped peanuts
Beat peanut butter and corn syrup in a medium bowl until well blended. Stir in cereal until well blended.
Using rounded tsp. shape mixture into balls. Place on a large baking sheet lined with aluminum foil. Chill several hours or until firm.
Place 6 oz. of chocolate in a medium microwave safe bowl. Cover with plastic wrap. Microwave at 100 % power, 1 minute. Stir chocolate until melted and smooth. Add remaining chocolate and continue stirring until smooth and well blended.
Using a fork, spear a peanut butter ball; dip into chocolate, turning to coat completely: shake off excess chocolate by gently tapping fork on edge of bowl. Return to baking sheet. Repeat with remaining balls. If chocolate thickens to much, microwave at 50 % power, 30 seconds or until soft.
Let stand about 2 hours or until chocolate is almost firm. Sprinkle tops with finely chopped peanuts. Let stand until hardened.
