1/2 Kielbasa or 1/2 package of maple sausage
1/2 sweet onion, chopped
1/2 red pepper, chopped
1/2 green pepper, chopped
8-12 eggs
4 pre-cooked medium potatoes,
cheddar cheese, sliced or shredded
1-2 Tbsp. cooking oil
Put a little oil in a large skillet and cook meat until 3/4 done. The meat will create its own grease, so use just enough to help it not stick at first. Add onions, peppers and potatoes to the skillet. Cook until meat, onions and peppers are cooked completely. The potatoes just need to be heated since they are pre-cooked. Add eggs to the mix. I like a pretty even egg to food ratio, so that it sticks together rather than falls apart. If you start mixing them in, and it looks like you need a few more eggs, just add them in. When the eggs are done cooking, I add the cheese to taste. If you're a real cheese lover, you may want to double up on it. I will sometimes put aluminum foil or a lid over the skillet to make the cheese melt faster. When the cheese is melted, you are done.
