Butterscotch pudding

Complete in 2 hours and 15 minutes
Serves 8

1 1/2 cup packed light brown sugar
1/2 cup all purpose flour
2 1/4 cup evaporated milk
3/4 cup water
4 egg yolks
2 Tbsp. water
2 tsp. vanilla
Whipped cream for garnish (optional)

Mix brown sugar and flour in a medium saucepan. Rub with fingers to blend; whisk in evaporated milk and water. Bring to boiling, cook, stirring, until mixture is thick, 3 minutes. Remove from heat.
Place yolks in a medium bowl. Stir in 1/2 cup hot milk mixture. Stir yolk mixture into milk mixture in saucepan. Simmer over medium low heat 1-2 minutes; do not boil. Remove from heat. Stir in butter and vanilla. Spoon into a clean bowl. Place in a larger bowl filled 1/2 way with ice and water; cool about 5 minutes.
Spoon into 8 dessert glasses; cover with plastic wrap and refrigerate 2 hours. Garnish with whipped cream if desired.
