Chipotle chicken taquitos

Serves 4

2 cups shredded cooked chicken*
3/4 cup water
1/2 cup thick and chunky salsa
1 packet (1.25 oz) chipotle taco seasoning mix
1 cup vegetable oil, for frying
8 (8 inch)soft flour tortillas
1 can (16 oz.) refried beans
1 cup (4 oz.) shredded cheddar cheese
sour cream
additional thick and chunky salsa

* Purchase a cooked rotisserie chicken at the supermarket deli department.

Combine chicken, water, salsa and seasoning mix in medium skillet over low heat. Cook and stir until well combined. Transfer mixture to medium bowl. Clean skillet. Line platter with paper towels.
Heat oil in skillet over medium high heat. Meanwhile, wrap tortillas with clean, lightly moistened cloth or paper towels. Mixrowave on HIGH (100% power) 1 minute, or until hot and pliable.
Divide beans evenly among tortillas, spreading down center of each tortilla. Top with 2 Tbsp. chicken mixture. Sprinkle cheese evenly over chicken mixture.
Roll each tortilla tighly. Carefully place in hot oil, seam side down. Cook about 3 minutes. Turn over and continue cooking until golden brown. Drain on paper towels and repeat with remaining tortillas. Serve with sour cream and salsa.

TIP: When served with a piping hot bowl of tomato soup, taquitos make a great light meal.
