Salsa chili

Complete in 40 minutes
Serves 6
1 lb. lean ground beef
1 small onion, chopped
2 jars (16 oz. each) salsa, any variety
1 can (15 oz.) black beans, undrained
1 cup water
1 can (4 oz.) fire roasted diced green chiles
1 packet (1.25 oz.) taco seasoning mix
OPTIONAL TOPPINGS: sliced ripe olives, sliced green onions, shredded cheddar or Monterey jack cheese, diced tomatoes, chopped onion, sour cream
Cook and stir beef and onion in a large saucepan over medium high heat until no longer pink. Drain and discard fat.
Stir in salsa, beans, water, chiles and seasoning mix. Bring to a boil. Reduce heat to low. Cover and cook, stirring occasionally, 20-25 minutes. Serve with desired toppings.
TIP: This salsa seasoned chili tastes equally delicious when reheated the next day.
