Macho Chicken nachos

Complete in 25 minutes
Makes 4-6 servings

1 Tbsp. vegetable oil
1 lb. ground chicken
3/4 cup water
1 packet (1.25 oz.) Taco seasoning mix
1 can (16 oz.) refried beans
4 cups tortilla chips
1 1/2 cup (6 oz.) shredded cheddar cheese
1/4 cup sliced jalapenos
1 cup salsa, any variety
1/4 cup black olives, chopped

Heat oil in skillet over medium low heat. Add chicken, water and seasoning mix. Cook and stir 7 minutes or until sauce is thickened. meanwhile, heat beans in microwave on HIGH (100% power) 2-3 minutes.
Preheat broiler. Spread tortilla chips in one layer on large baking pan. Top with small dollops of heated beans, chicken mixture, cheese and jalapenos. Broil about 3 minutes or until cheese is melted and chips begin to brown. Garnish with salsa and olives. Serve immediately.

TIP: To add more macho to your nachos, top with dollops of sour cream, chopped tomatoes and sliced green onions.
