Caramelized Onion and mushroom quesadillas

Makes 30 appetizers
1/2 cup sour cream
1 ORTEGA Soft Taco kit-- includes 10 soft flour tortillas, 1 packet (1.25 oz.) taco seasoning mix and 1 packet (3 oz.) taco sauce
1 Tbsp. vegetable oil
2 large onions, sliced
8 large mushrooms, sliced
3/4 cup water
nonstick cooking spray
2 cups (8 oz.) shredded Monterey Jack cheese
Preheat oven to 350 F. Lightly coat cookie sheet with nonstick cooking spray; set aside. Combine sour cream and taco sauce from Soft Taco kit in small bowl; set aside.
Heat oil in medium skillet over medium high heat. Add onions and mushrooms. Cook and stir 8-10 minutes or until onions are browned and mushroom liquid has evaporated. Stir in water and seasoning mix from Soft Taco kit. Cook 5 minutes longer or until thickened.
Place 5 tortillas from Soft Taco kit on prepared cookie sheet. Spread onion mixture evenly on tortillas and top evenly shredded cheese. Cover with remaining tortillas. Lightly coat tops with nonstick cooking spray. Place another cookie sheet on top of quesadillas. Bake 15 minutes or until cheese has melted and quesadillas are browned on top. Cut each into 6 slices. Serve with sour cream sauce.
TIP: For a smaller number of servings, you can make quesadillas one at a time in a well oiled skillet over medium heat.
