Sausage and egg breakfast burritos

Complete in 25 minutes
Serves 8

8 oz. breakfast sausage
2 Tbsp. chopped onion
6 eggs
1 can (4 oz.) Fire roasted Diced green chiles
1 packet (1.25 oz.) taco seasoning mix
1 cup (4 oz.) shredded cheddar cheese
8 (8 inch) soft flour tortillas, warmed
3/4 cup Thick and Chunky salsa, medium
Additional shredded cheddar cheese (optional)
Taco sauce

Cook and stir sausage and onions in a large skillet over medium high heat until no longer pink. Drain and discard fat.
Beat eggs, chiles and seasoning mix in medium bowl. Add to sausage mixture in skillet. Cook over medium heat, stirring occasionally, until eggs are set. Add cheese. Cook and stir until cheese has melted.
Spoon 1/2 cup egg mixture onto center of each warm tortilla. Garnish with salsa and additional cheese, if desired. Fold bottom helf of tortilla over filling; fold sides toward center, leaving top open. Serve immediately with taco sauce and additional cheese, if desired.
