Breakfast Tacos

Serves 6

6 oz. breakfast sausage
1 can (16 oz.) Refried beans
1 Tbsp butter or margarine
8 eggs, lightly beaten
1 package (12 count) taco shells
2 cup (8 oz.) shredded mild Cheddar cheese
2 cups chopped tomato
2 cups chopped green bell pepper
2 cups Thick and Chunky salsa, medium

Cook sausage in a large skillet over medium high heat until no longer pink. Drain and discard fat. Stir in beans. Lower heat to medium low and allow mixture to heat 3-4 minutes. Remove from heat; cover to keep warm.
Melt butter in medium skillet over medium heat. Add eggs. Cook, stirring constantly, 3-4 minutes or until eggs are at desired consistency.
Fill taco shells evenly with sausage mixture and egg mixture. Garnish with cheese, tomato, bell pepper and salsa, as desired.
