Fresh Salsa

Makes 2-3 cups

6 tomatoes
1 cup onion
1 large garlic clove
1 hot chili pepper or 1 (4 oz) can chopped chilies
2 Tbsp oil
2 Tbsp fresh lemon juice or lime juice
1/2 tsp cumin (optional)
Salt and Pepper
Cilantro

Dice tomatoes, onions, garlic clove and peppers and combine in a bowl. Add oil, lemon juice, cumin, salt pepper and cilantro. Adjust tastes as needed. If you have time, let it sit overnight or a few hours, the flavor wil combine and become stronger. Store in refrigerator.
