Tex-Mex bake

1 lb lean ground beef
1 package (10 oz) frozen corn kernels, thawed and drained
1 cup frozen chopped onion, thawed and drained
1 cup finely chopped sweet green pepper
1 cup milk salsa
1 tsp ground cumin
1/2 tsp salt
1 package (8 oz) corn muffin mix

Heat oven to 400.
Combine beef, corn, onion, green pepper, salsa, cumin and salt in a 9x12x2-inch baking dish. Cover with foil. Bake in heated 400 oven; 30 minutes.
Meanwhile, prepare muffin mix according to package directions. When 30 minutes baking time has elapsed, carefully spread batter over beef mixture, making sure the entire surface is covered.
Bake another 20-25 minutes or until golden brown and a wooden toothpick inserted in center of topping comes out clean.
