2 tsp Olive oil
1 large onion, chopped
2 cloves of garlic, finely chopped
1 sweet red pepper, chopped
1 sweet green pepper, chopped
2 jalapeno chilies, seeded, chopped
1 tsp sugar
3/4 tsp salt
1 cup (15 oz) pinto beans, drained and mashed
10 flour tortillas (10 inch)
1 Tbsp chili powder
1 Tbsp ground cumin
1/8 tsp ground spice
1 lb ground chicken breast
1 cup (8 oz.) reduced sodium tomato sauce
2 1/2 cup shredded Cheddar cheese, salsa, avocado, sour cream for serving

Heat oil in a large nonstick skillet over medium heat. Add onion, garlic, sweet peppers and jalapenos and saute 10 minutes or until crisp tender.
Add chili powder, cumin and all spice; cook 30 seconds. Add chicken, breaking up with a wooden spoon; cook six minutes or until no longer pink. Stir in tomato sauce, sugar, salt and beans.
Meanwhile, wrap tortillas in damp paper toweling. Microwave on 100 % power 1-2 minutes or until steaming and very pliable.
Stir cilantro into chicken mixture. Spread about 1/3 cup chicken mixture. Top with with 1/4 cup beans and 2 Tbsp cheese. Roll up envelope style. Serve with salsa, avocado and sour cream, if you wish.
