1/2 cup dry plain bread crumbs
1/2 cup all purpose flour
1 Tbsp chopped fresh parsley
1 tstp dried basil
1/2 tsp salt
1/2 tsp paprika
1/4 tsp black pepper
Juice of lemon
2 Tbsp butter or margarine, melted
2 Tbsp vegetable oil
1 whole chicken (3-4 lbs) cut into 8 serving slices

Heat oven to 350 F. Combine bread crumbs, flour, parsley, salt, paprika and pepper in a small paper bag; close and shake to mix.
Combine lemon juice, butter and oil in a large bowl. Add chicken, turning pieces to coat. Working with a few pieces at a time, shake chicken in crumb mixture in bag to coat evenly; place the pieces on a 15x10x1 inch jelly roll pan. Bake in preheated 350 F oven or until internal temperature of a thigh registers 180 on an instant read themometer. Increase oven temperature to broil. Broil chicken until lightly browned, 5-8 minutes.
